The craft

THIRTY YEARS
OVER COALS.

Dev’s is a family kitchen, Black-owned, holding down the corner where Bloomfield Ave meets the Six Points. The chef came up in Jamaica with thirty years of cooking behind him, and you can taste every one of them.

Jerk was born in pimento smoke. Done right, it is slow heat, scotch bonnet, and patience. The oxtail gets browned down hard and braised until the gravy coats the spoon. That is the long way. It is the only way this kitchen knows.
